What changes when meat is pre-sliced

Cut surfaces oxidise. Within hours, pre-sliced deli meat loses colour, dries at the edges and develops the slightly slick texture most people associate with packaged sandwiches.

Slices also compress in a tray, which is why pre-sliced fillings eat dense while freshly cut ones sit loose and light.

Why it costs more
