Timing
Most steakhouses do not take conventional reservations, which makes arrival timing the single biggest factor in how long you wait.
The genuine peak. Waits of 45–90 minutes are normal at busy locations, and this is when a call-ahead list is worth most.
Post-church and family lunch rush. Shorter than the weekend evening peak but still substantial.
The early-dining window. Quietest sit-down service of the week, and where early-dine pricing applies where offered.
Effectively dead time. Best odds of walking straight in, and the kitchen is not under pressure.
Holidays
Holiday hours change late. Restaurants frequently confirm holiday schedules only a week or two ahead, and individual locations diverge from the chain pattern. Treat the table above as a general expectation and phone your restaurant to confirm — especially for Thanksgiving, Christmas Eve and Easter, where practice varies most.
