What Does "Mike's Way" Mean?
Mike's Way is the house finish: onions, lettuce, tomatoes, oregano, salt, olive oil blend and red wine vinegar. It is the default on the cold subs and it is included at no extra cost.
Why it works
Vinegar cuts fat in a way mayonnaise cannot. On a sub carrying five cured meats and a slice of provolone, acidity is what keeps the whole thing from reading heavy — which is why the Italian-style subs taste balanced despite what is on them.
The oregano and salt do more than they appear to, tying the vegetables to the meat instead of leaving them as separate layers.
The one adjustment worth making
The oil carries most of the calories in the finish; the vinegar and vegetables carry almost none. Asking for light oil and extra vinegar keeps the character and removes the bulk of the addition. Staff do this constantly.
If you are taking it away
Mike's Way is applied before wrapping, so a sub eaten forty minutes later will have a softer roll. Ask for the oil and vinegar on the side and add it yourself — the bread holds up considerably better.
